Pinocchio pulled duck salad
2 confit duck legs (Either do this yourself – there are lots of recipes online – or you can buy confit duck from supermarket.)
1 cup mung beans
1 cup cucumber, seeds removed , cut into fine strips
¼ cup sliced red onion
4tbsp hoisin sauce
1 orange, segmented
4 tbsp toasted peanuts
2 tbsp fried shallots
Pinch of micro herbs
1. Shred the duck into strips.
2. Mix mung beans, cucumber, red onion in a bowl
3. Fry the shredded duck meat in a hot pan with a little canola oil
4. Once the duck is crispy, add the hoisin sauce and toss to coat the duck. Take the duck off heat
5. Thoroughly mix the duck with the cucumber, beans and red onion.
6. Place the salad on a plate, top with peanuts, fried shallots, segments of orange. Garnish with herbs.
