Oaty Ginger Crunch

 Base
150g butter
¾ cup brown sugar
2 tablespoons golden syrup
¾ cup plain flour
1 ½ teaspoons baking powder
1 ½ teaspoons ground ginger
2 cups whole oats

 Icing
125g butter
3 tablespoons golden syrup
5 teaspoons ground ginger
1 ½ -2 cups sifted icing sugar

1. Preheat oven to 180°C. Line a 32cm by 22cm rectangular baking tin with baking paper.

2. Melt butter, sugar and golden syrup in large saucepan over a medium heat. Stir gently to combine and remove from heat.

3. Sift the flour, baking powder and ginger into the pan with the buttery mixture. Add oats and stir to combine.

4 Press mixture into tin and smooth out with back of a spoon.

5.Bake for 15 minutes. Remove and leave in tin.

6.For the icing, gently melt butter and golden syrup over medium heat. Remove from heat and sift in ginger and icing sugar. 

7. Stir with wooden spoon to form a thick, smooth icing. Tip on to the warm slice.  Leave in tin to cool then cut into slices
